Tomato Toast

It may be a while before we get around to updating The Earthling's Cookbook, and I don't want to wait any longer to share my favorite summer breakfast with the world!

To make 1 serving, you will need:
2 slices of bread or 1 bagel (whole-wheat or poppy-seed is particularly tasty)
butter or margarine
2 Tbsp. nutritional yeast flakes
1 small tomato or 1/2 large tomato
fresh or dried dill
salt (optional)

Toast the bread.  Meanwhile, mix the yeast into the butter.  (You can just sprinkle the yeast over the buttered bread if you prefer—it's easier—but that means some of the yeast gets soggy against the tomato and the consistency is not as pleasant.)

Spread butter and yeast on bread.  Slice tomato and put it on the bread.  Top with dill and salt to taste.

A word about nutritional yeast flakes: I know they sound like something people would eat in the horrible future when there are no other foods, but actually they're very tasty!  They dissolve in any kind of oil to create a rich, yummy condiment.  The taste is unique but similar to cheese.  They have a lot of protein and minerals, and most brands are fortified with B vitamins.  Here's a nutritional profile (scroll down).
